   Egg muffins according to my easy muffins recipe can be prepared by anyone who has a desire to make healthy egg muffins for breakfast. You can use your favorite vegetables. I chose what I found in my fridge! ;)

Ingredients for baked egg muffins recipe:

  • Eggs - 6 (medium size)
  • Milk - 4 tablespoons
  • Butter - 1 tablespoon
  • Onion - 2 tablespoons
  • Carrot - 2 tablespoons
  • Green onion - 1 tablespoon
  • Bell pepper - 4 tablespoons
  • Tomato - 1 tablespoon
  • Sausage - 2 tablespoons
  • Grated cheese - 1/4 cup
  • Salt and pepper - to taste

Cooking steps for vegetable egg muffins recipe:

  1. Take 6 medium sized eggs. Break them apart, transfer to a bowl, season with salt and pepper to taste. Mix thoroughly until smooth.
  2. Add 4 tablespoons of milk and stir again.
  3. Heat a skillet over medium heat. Add 1 tablespoon butter and place the finely chopped vegetables of your choice in the skillet. For example, I took: onion, carrot, green onion, bell peppers, tomato. I also added a sausage). Add salt and pepper to taste and fry for 7 minutes.
  4. Combine the contents of the pan with the eggs, add the grated cheese and mix thoroughly.
  5. Pour the contents into baking tins. The molds can be pre-lubricated with oil.
  6. Bake in the oven at 350°F (180°C) for 15 minutes.
  7. After cooking, you can sprinkle with grated cheese and herbs on top.
